Guilt free chocolate chunk cookies
Our fourth Sugar Free September recipe is for double chocolate chunk cookies that you don’t have to feel guilty about eating. These little chaps are made with xylitol instead of sugar, and the chocolate we use is sweetened naturally with stevia too. This recipe is so quick and easy so give it a go and let us know how you get on.
- 160g plain flower
- 40 cocoa powder
- ½ tsp baking powder
- ½ tsp salt
- 200g no added sugar dark choc (Chocologic is great as it’s sweetened naturally with stevia)
- 110 g butter
- 200g xylitol (We prefer Total Sweet)
- 2 large eggs
- 1 tsp vanilla extract
In a large mixing bowl stir together plain flour, cocoa powder, baking powder and salt. In a separate bowl whisk the eggs and add the xylitol and vanilla extract.
Chop up 100g of the no added sugar Chocologic chocolate and melt in a pan with all of the butter until no lumps are left. It should be a nice silky consistency.
Add the melted chocolate mixture to the egg & xylitol mix, followed by the bowl of dry ingredients. Mix everything together until it’s all combined into a nice soft chocolatey cookie dough. Chunk up the left over 100g of chocolate and add to the dough.
Time to get baking. Turn your oven to 180 degrees, and using an ice cream scoop place balls of the cookie dough two inches apart on a lined baking tray. Push down on the balls slightly before they go into the oven so they go a little flatter before baking. Bake for 12 minutes until they start to crack on top. Don’t worry if they are really soft when you take them out the oven, they will harden up on the outside as they cool.
