At Peppersmith we’re big fans of reducing our sugar intake where we can, and breakfast is a great place to start. Popular breakfasts of fruit, granola and cereal typically contain a lot of sugar. No long lasting energy provided there, and you’ll probably find yourself heading back to the fridge only a couple of hours later. So to help you fuel your day and keep your sugar intake down, we’ve come up with a few low-sugar breakfast recipes. Here’s our first.
The Lean Green Crepe
If you want to pack your breakfast full of natural healthy fats, protein and plenty of vitamins then this one is for you.
Ingredients (makes three large crepes)
For the crepe mix
- 110g plain flour
- 2 free range eggs
- 1/2 a pint of whole milk (feel free to switch this to almond/soya/coconut/any milk of your choice)
- 2 good handfuls of fresh spinach leaves
- A little olive or coconut oil for frying
For the filling
- 1 log of goats’ cheese
- 1 red onion
- A splash of balsamic vinegar
- 1 avocado
- A few more spinach leaves
Method
Step 1
To make the crepe mixture, put the flour, eggs and milk in a food processor and blend until completely smooth. Add the spinach leaves and blend until the mixture is a vibrant green. Depending on the sharpness of your blade you may be left with some green bits in your mixture. As your can see there’s a few little speckles left in ours, we don’t mind, we think it adds character.
Step 2
Whilst the crepe mixture is resting, finely slice the red onion and soften in a pan with a little oil and a splash of balsamic vinegar. Let the onion cook down until it’s super soft and smells sweet. Lightly grease a large frying pan with coconut/olive oil and pour a third of the spinach batter into the pan. Flip the crepe after a couple of minutes then start to add the toppings
Step 3
Add some crumbled goats’ cheese and a few balsamic onions to the crepe whilst it’s still on the heat. This warmth will help the cheese to melt a little. Take it off the heat and top with avocado slices, more fresh spinach, and any other healthy wholesome ingredients of your choice.
